Recipe of the Month: Lemon Cranberry Chia Pudding

Prep Time: Overnight
Raw Materials:
Base:

  • ¼ cup chia seeds
  • 1 cup coconut milk
  • ¼ cup fresh lemon juice
  • ½ tsp lemon zest
  • 1 tbsp maple syrup
Toppings:
  • chopped Nagi Lemon Cranberry bar
  • 1 tbsp unsulphured cranberries
  • 1 tsp shredded coconut
 
Directions:
  • For Whole Chia Seed Version: Place all base ingredients in a mason jar and mix until completely blended.
  • For Blended/Smooth Version: Place all ingredients in blender and blend on high for 1-2 minutes until completely smooth and pour into a mason jar.
  • Place mason jar in the refrigerator for at least 4 hours or overnight to let gel. I prefer to make this at night to have ready for a fast breakfast the next day.
  • Add toppings right before consumption
